The organic wines VIÑAS DE ALTO SALVADOR are absolutely pure wines, with all the characteristics of the best conventional wines but elaborated only with organic grapes and according to the principles and methods of organic oenology. In order to obtain them, fine, healthy, natural grapes that we produce in our vineyards are necessary, taking care of the environmental conditions, the ecology and the soil management, which is a complex and living resource that we carefully protect to ensure its long-term stability.
We irrigate our farms only with water from the Cordillera that comes from the thaw and melting snow of Los Andes and we fertilize them only with organic fertilizers, excluding chemicals that are foreign to biotic processes.
We maintain sanitation through biological control and prevention:
- We never use pesticides or chemical or synthetic insecticides.
- Weeds are specially treated, without resorting to herbicides.
- In our organic wine cellar we never use altered or bad grapes.
- We do not have yeasts or enzymes that are the result of bioengineering and synthetic chemicals to clarify the wine.
- Nor do we use inappropriate biological stabilization techniques.
- We especially care for our factory and hygiene standards so that in the process there are no undesirable and even toxic components in the musts or in the wines, guided by the conviction that the wine is a food of the man that in our cellar must receive all the care that deserves a product of special quality.
